A Sunday treat: Simple Healthy Cookies for Your Coffee Moment

Sundays are made for slowing down . For a quiet moment with a cup of coffee, a walk, a reset — and sometimes… a little something sweet. 

If you’re like me and sometimes you enjoy having a small bite with your coffee but still want to keep things balanced I have a simple homemade recipe for you today. These cookies are easy, nourishing and perfect as a fit sweet treat— no fuss, no guilt—just real ingredients.

They’re great for meal prep sharing with family or keeping in the kitchen when you feel like nibbling on something cozy and comforting. 


Healthy Oat & Apple Cookies

  • 1 cup rolled oats (jumbo or regular)
  • 1 large apple (grated)
  • 1 egg
  • 1 tablespoon cinnamon
  • 1/2 teaspoon baking powder
  • A handful of dried cranberries
  • A handful of walnuts (chopped)
  • A pinch of salt
  • 1 tablespoon peanut butter

Method:

1. Grate the apple using a coarse gates. If it’s very juicy, gently squeeze out excess liquid

2. Add all ingredients to a bowl and mix well until combined

3. Let the mixture rest for 10 minutes so the oats can absorb moisture

4. Form small cookies and place them on a baking tray lined with parchment paper

5. Bake at 180°C (356°F) for 15-20 minutes until lightly golden


Let them cool slightly—they taste best warm with coffee or tea!
